Join us for a live cookery demonstration, which you can take part in. Catering & Hospitality tutor Richard Newall will be making Moroccan Chicken and Vegetable Stew with Flatbreads!

You will need:

For the stew

  • 1 x tablespoon olive oil
  • 1 x red onion
  • 1 x aubergine
  • 2 x garlic cloves
  • 1 x courgette
  • 1 x red pepper
  • 1 x tin chopped tomatoes
  • 1 x tin chickpeas
  • 1 x bunch fresh coriander
  • 70g dried apricots
  • 1 x Knorr chicken stock pot (or similar)
  • Rass el hanout or Moroccan spices
  • 1 x teaspoon smoked paprika
  • 4 x boneless chicken thighs

For the Flatbread

  • 350g Self Raising Flour
  • 1 teaspoon baking powder
  • 350g natural yoghurt

Equipment

  • Chopping board
  • Raw meat chopping board
  • Knife
  • Wooden spoon
  • Tongs
  • Griddle pan or non-stick heavy-bottomed frying pan for flatbreads
  • Saucepan for stew
  • Cooling rack for flatbreads
  • Serving plates x 2
